Finally! I have time to post a recipe! And yes, it’s another vegetarian one! Someday, I’ll post one with meat, I promise! But back to the meatless!
So if you are doing Weight Watchers, you are likely familiar with Hungry Girl. She fearlessly slashes calories and fat down to nothing with super easy recipes, often incorporating vegetarian “meat” products to save calories and cut back on fats, especially the saturated kind! In searching for recipes in my collection that were vegetarian but that also boasted a good dose of protein, I came across Hungry Girl’s Cheesy Beefy Quesadilla. I gave this a try exactly as written, and I have to say, it was actually good AND yes, super easy! I even used that weird fat-free shredded cheddar cheese, and it really was good.
However, I try to shy away from stuff with a long list of weird additives and try to be a little more whole/natural foods oriented when I can. (Operative word is “try.”) I happen to know a lot of you out there are as well. And well, this probably won’t appeal to you die-hards out there, but this is a less “weird ingredient” and more jazzed up version. And while it may be higher in calories and fat than Hungry Girl’s version, it’s still decent and pretty low in carbs with 14 net carbs, and it was super-delicious, if I do say so myself!
Cheesy “Beefy” Portobella Mushroom Quesadilla with Avocado-Sour Cream Dipping Sauce
adapted from Hungry Girl
1/2 cup (about 35g) portobella (or button) mushrooms, chopped
1/8 tsp onion powder
1/8 tsp garlic powder
1/4 cup Trader Jose’s (Trader Joe’s) Fancy Shredded Mexican Cheese Blend
2 Tbsp Trader Joe’s Fat Free Sour Cream*, divided
1/3 cup MorningStar Farms Meal Starters Grillers Recipe Crumbles
1 Tbsp (about 5g) green onions (scallions), chopped
1/4 tsp McCormick 30% Less Sodium Mild Taco Seasoning Mix
1/2 wedge The Laughing Cow Queso Fresco & Chipotle Flavored Spreadable Cheese
1 La Tortilla Factory Smart & Delicious Low Carb/High Fiber Tortilla, large size
1 Tbsp (about 9g) avocado
1/4 tsp lime juice, fresh
Heat a cast-iron (or regular) skillet over medium heat. Spray with cooking spray. Add mushrooms, onion powder, and garlic powder. Saute until soft, stirring occasionally.
While mushrooms are cooking, combine grillers crumbles, Mexican cheese, scallions, 1 tablespoon sour cream, and taco seasoning mix in a small microwave-safe bowl. Microwave for about 30-45 seconds. Stir and set aside.
Lay tortilla flat and spread cheese wedge evenly over one half.
When mushrooms are soft, remove from skillet and add to the grillers crumbles mixture. Mix thoroughly. Spray skillet with additional cooking spray if needed. Lay tortilla in it with the cheese side up. Top the half with cheese with the grillers crumbles mixture. Spread evenly.
Using a spatula, fold the plain tortilla half over the cheese and grillers crumble mixture half, pressing down with the spatula to seal. Cook for about 1 minute on each side, or until slightly toasted on both sides. Transfer tortilla to a plate, and cut into 3 or 4 pieces. (It’s easiest to do with a pizza cutter. And be careful when cutting, the insides easily gush out! Do it gently!)
Combine the avocado, lime juice and 1 remaining tablespoon of sour cream. Mash and mix until smooth. Place in a small dipping container or just dab it on the side of your plate!
* Trader Joe’s makes amazing fat free sour cream with out any of those crazy additives that other brands use!

Note that I have literally made this several Meatless Mondays in a row. All the ingredients either keep well or are a staple in my fridge anyway. I’ve made it with other cheeses, such as real Queso Fresco, I’ve added real onions, garlic or shallots to the mushrooms if I have it on hand, sometimes I add some frozen corn, or I used ranch dip instead of avocado-sour cream… You get the picture! So work up your own easy protein-filled meatless quesadilla!
Additional note… if you can get salt-free taco seasoning mix or whip up your own mixture, it might save you about 25mg of sodium. But unfortunately, it’s the cheeses, tortilla, and crumbles that bring this into the high sodium category. So drink lots of water!
