Healthy Recipe: Holiday Leftovers Turkey Sandwich

Ok, so I know the Thanksgiving holidays are over, but I have had a number of these holiday leftover sandwiches since the big Turkey day. Maybe you still have some leftovers, or you can try it out at Christmas! It’s so simple, but so good! It’s the first time I put this together! I got the idea from Kraft’s Ultimate Leftover Turkey Sandwich recipe. Turkey, stuffing, cranberry sauce, miracle whip, and bread. That’s it! I tried it a couple ways. On my first attempt, I put it all together cold and added some uncooked fresh spinach. Yum! Another time I tried heating up the stuffing and Turkey and toasting the bread. Not bad, but better cold. Another time, I just toasted the bread and added a tablespoon of gravy. Pretty tasty. The gravy especially works well if you use white meat and it has gotten dried out or if the stuffing is dried out. Any way you put it together, it is hard to mess up! They all tasted great!!!

Ingredients

2 slices Nature’s Own Light White Bread
3oz cooked Dark Turkey Meat
1/4 cup prepared Stuffing
1 Tbsp Kraft Miracle Whip Light Dressing
1 tsp canned sweetened Cranberry Sauce
1 Tbsp prepared Turkey Gravy (optional)
1 small handful fresh Spinach, Lettuce, or other Leafy Green (optional)

Instructions

Place turkey and stuffing on one slice of bread. (You can toast the bread and use white meat or a mix of white and dark meat, if you prefer.) Drizzle with gravy, if desired. (I had to heat it up a little bit to drizzle it evenly.) Spread Miracle Whip on the other slice of bread. Top with cranberry sauce, or what ever cranberry sauce you prepared. It is not easy to actually spread canned cranberry sauce, so I just cut very small pieces and spread them evenly over the Miracle Whip (see the picture below). Place Spinach on top of the Turkey & Dressing slice of bread, if desired. Top with slice of bread with Miracle Whip & Cranberry.

  • Ingredients only readily available during the holidays! (Of course you can whip up some stove top and buy a can of cranberry sauce any time of year!)
